Excess Monterey Jack

What do you make with Monterey Jack cheese? I inherited 2 pounds of it, and I never cook with monterey jack; I usually go with pepper jack cheese because it has more flavor.

Anyone have any favorite recipes that use it?

I think we (meaning I) usually use it in Mexican type foods, ie. chicken enchiladas, or chicken chili. Good luck!

Didn't you leave half of it over at our place? Anyway since you asked for ideas...could you use it in a baked pasta dish, omelette, or macaroni and cheese? It may not be quite the same, but it would use it up.

Try making tacos! Monterrey Jack is great cheese for that!
