Since Mr. Souffle and I had the good fortune to be able to attend a participatory cooking class at L'Academie de Cuisine a few months ago, I've signed up to receive email updates from the academy informing me of future classes and events. There hasn't been much that has caught my attention thus far; I find myself comparing the classes with the one I already went to and nothing seems to measure up.
Until now.
Just a few minutes ago a little email popped into my inbox with the subject "Great Fall Classes from L'Academie". I must mention that not only have none of the recently advertised classes caught my eye, they're also fairly pricey, so it's going to take a real special class to reel me in. And then I saw it.
Sweet & Savory Fall Soufflés.
I'm not making that up; the class really is named as stated above. With dishes like shrimp, ham and gruyere souffle tarts, frozen pumpkin souffles with candied pecans and bourbon cream, and semisweet chocolate souffles with pistachio ice cream...how could I go wrong?
The only problem is that the class is on a Wednesday from 10 am until 1 pm, so I'd have to take the morning off to attend, and I have an appointment with the dentist that morning at 9 am.
But dental appointments are easily rescheduled.

Ahh, your first post after the beginning of seminary. I'm glad you still have energy to take classes!
That sounds like fun. If you end up going to the class I look forward to an interesting report.
