Veggie Tales

My mother-in-law recently sent over an article called "Cancer-Proof Your Diet." My husband was skeptical when I told him about it, but I have a question for my readers. The article suggests that although we should eat 5-7 servings of vegetables a day, we should actually aim for nine! After evaluating my menus, I realized that I am a far cry from these recommended quantities of veggies, so I need some advice: how do you incorporate more vegetables into your daily caloric intake?

We are also far from the recommended servings. I guess you could always drink V8 for breakfast, but I won't touch the stuff. Phil likes it when I pack him carrot or celery sticks for lunch (although he'll say I don't pack him lunch very much, which is sadly true). We also eat a lot of salad, which could count for more servings, since I pack it with vegetables. Good luck with 9 servings though!

you mean you pack him a lunch ever? Wow! That's way better than V8 in the morning (or ever).

Let me try this...

I'm guessing you could pack two servings into an omelette in the morning, using potatoes, mushrooms, olives, etc. Then have carrot sticks for a mid-morning snack. For lunch, load up a sandwich with two servings of good stuff like cucumbers and bell peppers and whatnot. Have celery sticks for a mid-afternoon snack. Have a three-serving salad with dinner.

Well, there's a 9-serving day for you. I don't know how well I could sustain a 9-serving diet, though.
